Chia Seed Pudding

This is an excellent snack, or you can heat it in the morning to add some healthy variety to your breakfast.

4 servings

  • 1/8 cup cocoa powder

  • 1 Tbsp maple syrup

  • Pinch of sea salt

  • ¼ tsp cinnamon

  • ¼ tsp ginger or black pepper or trikatu

  • ½ tsp vanilla

  • ¼ - ½ cup of chia seeds (depending on desired consistency)

  • 1 cup of coconut milk or homemade pumpkin seed milk

  • 1/2 -1 cup water

  • 2-4 berries of your choice


Mix wet ingredients together. Mix dry ingredients together. Add dry to wet ingredients and stir until mixed well. Cover and set in the fridge over night. Add extra water for desired consistency.

Set out for 30 minutes before eating to bring to room temperature or add hot water for a warm morning porridge. Consider adding berries for a lovely topping and sprinkle with warm roasted pumpkin seeds for some crunch.
